The tofu still has that spongey-ness but I don't think it's as spongey as the marinated pieces (if it's the ones I'm thinking of) I just press it for a good 20 minutes.

My son isn't vegan but I mostly cook vegan meals at home so he does get a good mix. Having a fussy time at the moment so like you I'm not sure I want to restrict things. I want him eating something.
