what do you do with it? looking for some inspiration as I always just make aubergine and butterbean sausages and fancy something different! :)
 
Parmigiana - it's like lasagne I suppose, but using aubergine slices instead of pasta. You slice the aubergines lengthways, and fry them in seasoned flour so they look like fritters. Then layer them up with a basic tomato sauce (like you'd use for pasta), mozzarella and grated parmesan or similar. Then bung it in the oven for a while til all the cheese is golden and it's heated through. Sorry it's not a proper recipe lol, my Mum makes it so I just copy her :haha: It's really tasty despite having no meat in it. If you're not vegetarian, you could try doing moussaka. I don't have a recipe but there will be loads online. x x
 
that sounds really good, I don't eat any dairy but I can just miss the cheese out! :D

so do I just dip the aubergine slices into the seasoned flour and then fry them? i.e. do I have to dip them in anything else first?

I made vegan moussaka before but it was a bit meh :haha:
 
Ooh yeah sorry, you dip the slices in egg first, then flour :dohh: If you don't eat dairy but will eat sheeps milk, you could use pecorino cheese which is similar to parmesan.
