Egg fried rice is easy
You can adjust the amounts to suit you, I use a rice cooker so measure out the rice and cook it in that so using their 'cup' measure I do...
2 cups cooked but COLD basmati rice
3-4 medium eggs
1 medium onion
1 cube frozen garlic
1 cube frozen ginger
handful frozen peas
soy sauce
sesame oil
vegetable oil
Cook rice and allow to cool by spreading on a baking tray
Chop onion finely and sweat in wok with a little veggie oil
Add garlic and ginger, cook for a couple mins
Add peas cook another min
Add beaten eggs - Keep stirring until all the egg is VERY well cooked and what is in the pan is DRY (this is the trick otherwise you get sloppy rice)
Add the rice to the pan and mix well with the egg mixture
Now add a good squiggle of sesame oil and cook for a min or 2 then add a good couple squiggles of soy sauce.
....adjust the flavours from there if you want more sesame or soy etc.
Just make sure you use a good non-stick wok or high sided pan, use very little oil until you add the sesame, if the onion starts to stick add a splash of water.
Make sure the egg is very well cooked and the mixture is dry before adding the cooked cold rice and you should get nice light egg fried trice with separate grains that is super yummy.
Of course you can add other bits and bobs like ham, pork, chicken to make special fried rice.
