I am not celiac, but my SD16 is.
So we eat GF around here simply out of ease and necessity. She has very little to no self control, so we cannot keep gluten in the house at all or she will eat it.
So I am not forced to be GF technically due to illness, but live GF anyway.
I eat a lot of salads, fresh fruit, smoothies, lean meats, and rice. Rice definitely helps gluten cravings...rice crackers, rice cakes, etc.
Quinoa is a huge help also. Potatoes can ease some of the need for starch as well and leave you feeling pleasantly full.
I have had some success baking with GF Bisquick (good for making shortcakes for strawberry shortcake) and Bob's Red Mill All Purpose GF Flour - makes good pizza dough.
Udi's and Rudi's make some decent GF sandwich bread. You have to keep it frozen and toast it, but it is not terrible. Good for making grilled cheese sandwiches.
Pudding is good for sweet or chocolate cravings...it helps fill the pastry void (Kraft is GF).
You can usually find some sort of cookies in the GF isle. Some of them are decent.
Almonds also help. Eggs too.
Chex cereal makes a LOT of GF flavors. We like the honey nut. It also helps satisfy some of the sweet/bready craving needs.
Definitely check in with the doctor about your vitamin needs. GF foods are generally not fortified with Iron, Folate and Vitamin D, all of which are very necessary for pregnancy.
