Cupcake Icing ?

Hey.

I am planning on baking some cupcakes for OH for valentines day. I have tried making frosting from scratch before and failed miserably so I decided to buy some "Betty Crocker - Rich and Creamy Icing" and I was wondering, if I add food colouring, would it be ok to pipe and have the same find of effect ?

I've piped the choc fudge one before and it's fine.Sometimes a little runny so i put it in the fridge for half hour or so.
Never tried colouring it though. xxx

Isnt it brown? I dont think food colouring would have an effect.
 
No you can get Betty Crocker Vanilla buttercream i've seen it in tubs in the shops.It's a white creamy colour.I assumed she meant that. x

Oooh I havent ever seen the white one.. Only the brown.. I suppose food colouring would work then. Show us pics after I always like seeing pics
 
I was hopeless at making icing!! till i got the hummingbird bakery book try this recipe for vanilla frosting.

250g icing sugar, sifted
80g unsalted butter, at room temperature (i melt mine slightly in the microwave so its easier to get rid of lumps)
25ml whole milk
a couple of drops of vanilla extract

I use my hand held eletric whisker but a wooden spoon/normal whisk will be fine. The longer you whisk the lighter it will be i whisk mine for about 5 minutes!
 
Thanks shiawase, I am deffo going to try that. Think I might treat myself to an electric whisk because I'm always baking and I'm gunna end up with carpel tunnel or something lol.

The problem I always get with frosting is it always ends up kinda oily and the texture feels like I used normal granulated sugar even though I used icing sugar.
 
I do roughly the same.

My recipe is 12oz icing sugar 6oz butter, a little splash of milk and I make sure my butter is really really soft. Use a whisk, I had an electric but it blew up so I have been using my normal whisk and it still comes out nice

Hey. I have just tried this recipe (but halfed it because didn't wanna waste a load of food incase I screwed it up lol) and it tastes amazing, so amazing I actually said Oh My Gawd out loud lol. Only problem I have is it's too liquidy even though I waited until the cakes were completely cool before icing. I want the kind of icing that you pipe, do I just add more icing sugar to it to make it thicker ? Thanks for any help =)

Yeah add more icing sugar and maybe not so much milk.Very pretty cakes xxx

I am very very happy now =) Next problem is...the butter makes the mixture a slightly yellow colour and then it goes a less vibrant colour when I add the food colouring. Any suggestions ? It's not too big a problem though.

Just use more food colouring.The paste colours are better than the liquids. x
 
Look great :)

If you're gonna be making quite often invest in sugarflair paste colours. They're majorly vibrant. xx
 
Sugarflair is great. I also use the new silver spoon. Its like a gel and not a liquid so it doesnt change the consistancy.
