Diabetes Friendly Foods

Anyone have any recipes for GD friendly dishes? We both love casseroles, pasta, etc. but some of the pasta has to go by the wayside.

I'm open to a lot of different things, prefer fairly simple and quick dishes most nights but sometimes I really get to cooking and make something more complex!
