homemade pizza

I use half a pitta or a piece of low-salt bread. I've started to make some with herbs and tomatoes in, bung it all into bread maker!

I then top with some tomato puree, roasted vegetables some cheese...and then maybe bit of chicken.

Pop under the grill until bubbling and golden.
 
We make all our pizza bases from scratch (and it only takes a couple of mins!!!)

In a bowl, place 1 and 3/4 cup of flour
1x sachet of packet Yeast
Approx 170ml water

Mix it together with your hands. If it is really sticky...just means you need a tad more flour (or add a little less water).

Then cover it and leave it to rise for 30mins or longer if you want. Sometimes I will make the dough in the afternoon then roll it out and top it in the evening.

As simple as that! Add any sauces/toppings you fancy. Then cook for approx 20-30mins...you will smell & see when it is ready...take it out before the cheese browns.

Oh yeah...I should have said that we divide the dough in half above and make two pizzas from that.
 
This is what I do...

150ml warm water
1 tbsp olive oil
half a sachet yeast
225g strong white bread flour

Mix the flour and yeast, then add the water and oil. Mix to a dough and need until you have a smooth, elastic dough. pop into a large oiled bowl, cover with cling and leave in a warm place for about an hour until doubled in size.

Roll out into one large or two small pizzas then prick all over with a fork.

Top with toppings and bake at 220 degrees for 12-15 mins.

Tomato sauce
soften an onion and 2 garlic cloves in a tbsp of olive oil.
Add a tin of tomatoes and a tbsp of tomato puree, season and simmer for about 20 mins.
