Icing Question

Hi,

I need some help please. I would like to make a cake with an icing like for example on a carrot cake, i.e. not hard icing, but soft consistency icing-like substance.

Basically I do not want it to dry hard, I want it to stay sort of soft. What am I looking for? Does anyone have a recipe?

Sounds like you are thinking of cream cheese frosting. x
 
Yeah if I am doing carrot cake I always use cream cheese frosting.
 
It sounds like you are looking for a frosting/ buttercream recipe. this is the soft icing that is often used on cupcakes/cakes. Not the hard drying icing.
If so, the most basic one is butter, twice as much icing sugar, flavour (vanilla, choc, lemon etc) and a drop of milk. mix together. this can be modified to suit and can be piped onto cupcakes, used as a filler in cakes and as a crumbcoat before fondant.
