Salmon Patties
I can of pink or red salmon, drained
7 soda crackers
1 egg
Mix until well blended. I buy the salmon with bones, because if you mush them up, they are a great source of calcium, BUT, you can buy canned salmon that is boneless too. Mix it up, mush up the bones...and then form into patties. I usually make 4 patties out of one can. Heat up a skillet with about 1-2 tablesppons of olive or sunflower oil. Cook patties on both sides until crisp and golden.
These are so yummy...and kids like them! I have my two kids and my neices and nephews all eating them!!! So, give them a try. They are fast, inexpensive, and healthy!
