Whether or not you BLW, the BLW cookbook is fab. It has varied our diet so much and most are easy store cupboard meals. I also just bought dh 'my daddy cooks' for fathers day, and that looks pretty good too
Here's some of the quick and easy things I make that my LOs (3 and 1) love
- Chicken stir fry
- Spaghetti bolognese
- Spaghetti and meatballs
- Meatballs with onion gravy and mash (or sausage and mash)
- Chicken pasta bake (I just brown the chicken and then chuck the rest in a dish and pop it in the oven and its ready for teatime)
- Sausage casserole (again I just put it all in an oven dish and leave it in the oven for a few hours while I do everything else that needs doing)
- Thai green curry
- Chicken wraps
- Shephards/cottage pie
I also make my own soups - its not quick or easy but I do mine on a monday and make enough to last a few days through the week and freeze it then the day before I defrost them. And I do the same with a few meals especially sunday dinner I do extra potatoes and veg and freeze them then if I'm in a rush and can't cook a lunch I can just pop them in the microwave x
A meal i did recently went down well with all of us -
Chicken breast cut into cubes
Creme fraiche (cream if you want, cream cheese would be nice too)
2 balls of frozen spinach
1 leek
mushrooms
garlic
pasta
Cook chicken and veg in frying pan until spinach defrosted, add creme fraiche and cook on a medium low heat for 10 minutes or so, mix in pasta et voila!
