If you've got a rice cooker it's super easy - you can do it on the stove as well if you need to.
Saute rice in a bit of olive oil (just a drop or two) with some garlic, chilli, turmeric and cumin (and finely chopped onion if you like). Add some chopped peppers and maybe some tomatoes (but not too many). Throw in a chicken stock cube (or fresh chicken stock if you're feeling posh!) with water to the right volume for the amount of rice you're cooking and go for it.
At the end mix through some fresh chopped coriander and some lime juice (lemon will do, and if you forget don't stress - it just livens it up a bit).
And if you're wanting a total one-pot meal and are using a rice cooker - put a chicken or fish fillet on a bit of foil or baking paper with come herbs and rest it on top of the rice. It will cook with the rice and you only have one dish to wash
Plus if the phone rings or kids interrupt it will keep warm for you
