Inspired by Vickies post on healthy snacks to avoid us all becoming boring with main meals thought we could share some recipes which are good for mums to be? Here is one I had in a gastro pub and recreated.

Time to prepare: 15 minutes
Time to cook: 20-40 minutes depending on cut of chicken.

Beets Chicken... Good for Iron, Folic Acid, B Vitamins, Carbs & Protein

Chicken - whatever cut you prefer i prefer a couple of thighs
Beetroot (1 or 2 per person depending on size and how much you like it)
Shallots (2 per person)
Green Beans (handful per person)
Streaky Bacon (2 slices per person)
New Potatoes (usually 6/8 per person)

Step 1: In a pan fry off seasoned (salt and pepper) chicken in some olive oil to get colour on the skin etc, then put into the oven to cook through properly.

Step 2: Put on some new potatoes to boil, they usually take 15/20minutes to par boil. If they are ready sooner take off the heat just put to one side.

Step 3: Steam/boil your green beans till ready and put to one side.

Step 4: In a shallow pan fry your new boil potatoes, once they start taking on some colour add in your diced shallots and streaky bacon cut into thin slices. Just before the bacon is cooked add in your green beans then place on a warm dinner plate

Step 5: In the same pan as the bacon (but without the bacon) fry your beets (cut into quarters) in a little more olive oil, they only take a few minutes to warm through on a higher heat. Then put around the potato/bacon/green beans on your plate.

Step 6: Put the chicken and any juices which came from cooking the chicken on top of the warm vegetables.

Step 7: Eat, Eat, Eat!
