I definitely think of Sammy as a nickname, even more so than Sam. What about Samson or Samwell? If you can't agree on a more formal name then I might be tempted to just go with Sam and use Sammy as a nn. Sammy doesn't really age well imo.
 
Sammy is definitely a nickname to me. The way I think of it, is when he's thirty, how is he going to want to introduce himself? At least if you put his name as Sam, not Samuel, it's more grown up. My BF has a friend whose name is Andy. Not Andrew, Andy. And he has to introduce himself like that. He hates it. Just my opinion. Hope it helps and you find a name that you really like!!
 
I agree, I wouldn't go for Sammy as a full name. It's cute and personal but he'll likely encounter situations where he doesn't want to be perceived as such as an adult. I was also going to suggest Sam but if your husband won't budge, I'd personally look for something else.
