I actually love spinach salads- but I also enjoy a good baked potato with minimal toppings, turkey wrap, grilled chicken w/rice, veggies, cottage cheese, rice pasta with light sauce/spinach/mushrooms or other veggies...
There are so many options if cook it properly... sometimes, if I want a sandwich I'll just make one with no top- bottom bread only. Either bake it with a bit of cheese or leave it open faced... with BBQ season, I like to grill up some chicken skewers with veggies... as they can easily be re-heated later or even chilled is yummy. I also like snacky foods- so a variety of smaller options- or burrito fixings (there are low calorie/carb wraps you can buy) then some ground turkey, beans, little light sour cream or avocado Yum! I'm getting hungry now... LOL
