Anyone got a meatballs recipe they'd like to share?

I've decided I want to make meatballs, think I have all the ingredients here (mince, onion, tomatoes, bread, eggs) and would just like someone to provide a good recipe!

oooo nigella has a great one i will dig it out for you today and stick it up. it makes loads and they feeze sooo well...i may make some to. will put up when back from vets
 
sorry its late - these freeze so well and taste fab you dont have to use both mince if you want

250g minced pork
250g minced beef
1 egg
2 tbspns freshly grated parmesan
1 garlic clove, minced
1 tsp dried oregano
3 tbspns semolina or breadcrumbs
Good grind black pepper
1 tsp salt
Tomato sauce
1 onion
2 cloves garlic
1 tspn dried oregano
1 tbspn butter
1 tbspn olive oil (not extra virgin)
700g bottle tomato passata
Pinch sugar
Salt and pepper
100ml full fat milk

Just put everything in a large bowl, and then, using your hands, mix to combine, before shaping into small balls. Place the meatballs on baking sheets or plates that you have lined with clingfilm, and put in the fridge as you finish them.

2.For the sauce, put the onion, garlic and oregano into the process and blitz to a pulp. Heat the butter and oil in a deep wide pan, then scrape the onion-garlic mix into it and cook over a low-medium for about 10 minutes. Don't let the mixture catch, just let it become soft. Add the bottle of passata and then fill the empty bottle half full with cold water. Add this to the pan with the pinch of sugar, some salt and pepper, and cook for about 10 minutes.

3.The tomato sauce will appear thin at this stage, but don't worry as it will thicken a little later. Stir in the milk, and then drop the meatballs in one by one. Don't stir the pan until the meatballs have turned from pink to brown as you don't want to break them up. Cook everything for about 20 minutes, with the lid only partially covering it.

4.At the end of cooking time, check the seasoning as you may want more salt and a grind or two more of pepper.
 
Thank you! I made them anyway, pretty much as above minus the parmesan, which I'll try next time. 24 meatballs in the freezer :thumbup:
 
I have a great recipe, very simple too, for chicken meatballs if your interested :)
 
Sorry it's a bit late - I use my old student recipe for meatballs....cheap and cheerful and very very quick!

Serves 2/3

250g Minced beef/pork/chicken etc etc
1 small onion (chop fine, cook in microwave until soft, use about 2/3 in the meatballs)
grated cheese (can be any type of cheese - I use bog standard cheddar)
Sage and Onion stuffing mix (a handful or so)
Salt and pepper

Make a tomato sauce:
Tin of plum tomatoes
2/3 Mushrooms
remaining onions
basil
garlic
red wine

Fry off the meatballs (should be about 12 good sized ones, make sure they're packed nice and tight) until cooked through, add all the ingredients for the tomato sauce to the meatballs pan, simmer for 5/10 minutes until it's all hot through and bubbling.

Serve with pasta and plenty of cheese!!!!! It's one of our favourites and takes about 20 minutes from raw to plate!
