biscuit recipe

Almond Shortbread Fingers:

100g Low-fat Sunflower spread
50g Castor Sugar
50g Plain Flour
50g Wholemeal Flour
75g Ground Almonds

Beat together the low-fat spread and sugar until light and fluffy. Work in the remaining ingredients to form a soft dough. Press into a lightly greased tin. Prick all over with a fork. Bake in a preheated oven at 160C/325F/Gas Mark 3 for about 40 minutes until a pale golden brown.

They taste soooooo good! :D *I've just been told I'm making more tomorrow...*
 
That's good too :D can't beat a good bit of simple shortbread, I do like my almond ones though :p
