500-odd people can't be wrong! I tried this and thought it was really nice, but it's the first time I've ever eaten carrot cake, so had nothing to compare it too. I did a cream cheese frosting to go on top though. Think there is a recipe for that on the front page of the cake baking and decorating thread in here x
