Chicken noodle soup

Ingredients (serves 6)

* 1 tbs olive oil
* 1kg pkt Woolworths soup pack, peeled and diced
* 4 cups (1 litre) chicken stock
* 4 cups (1 litre) water
* 2 (about 400g) single chicken breast fillets
* 130g (2 portions) instant noodles
* 1/4 cup chopped fresh parsley
* Salt & freshly ground pepper

Method

1. Heat oil in a large saucepan over medium heat. Add vegetables and cook, stirring often, for 8-10 mins or until vegetables start to soften.
2. Add stock and water. Cover and bring to a simmer. Simmer, partially covered, for 15 mins. Add chicken and cook over low heat for 10-15 mins or until just cooked. Remove from pan. Set aside to cool. Use your fingers to shred chicken.
3. Return soup to a simmer. Add noodles and cook, uncovered, for 2 mins or until cooked. Stir in chicken and parsley. Season and serve.
