Chicken Stew?

Right ladies (and gents!) I want to makechicken stew, like the proper thick irish chicken stew with potatoes and whatnot in it. Not a chicken casserole. Problem is, I don't have a clue how to make it!I've a horrible feeling it'll end up a chicken soup anyone talk methrough it? x

I make my chicken stew with chicken fillets, carrots, onions and potatoes. I par-boil the spuds and in a seperate pot boil the chicken fillets till there cooked then i throw everything into a pot of chicken soup and allow to simmer for about 2 hours..

I would use 2 family size packs of chicken soup but only use half the reccomended amount of water to each packet, just to make it nice and thick.. I also use some parsley and thyme for some extra taste..

if it comes out too thin, you can always use cornstarch to thicken it up a bit
