Every year at work we do a cookie exchange at Christmas, they are supposed to be homemade.

Last year, I sort of cheated because after making no-bake cookies four times and ruining them, I just went to the store and pretended I made them & I think everyone knew!!! hahaha :dohh:

Do any of you know a really yummy cookie recipe? I have to make a batch of 3 1/2 dozen! So simple cookies would be best! :flower: Thanks!

I use this recipes and can usually make 20 reasonably big cookies from it.

125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips**

cream butter and sugars, add egg and vanilla, sift in flour and salt, then choc chips.
180°C, gas mark 4 for 10 or so minutes (leave room for spreading and be sure to make sure they dont get too overdone, just starting to get some tan colour to them is about right)


** You can use all sorts of variations, nuts, toffee, rolos, raisins, chunks of chocolate, fruit.....

Everyone who has tried the ones I have made have fallen totally in love with them.
