I think it's just taht baby is used to having you there and all of a sudden you are gone.
I have a mirror (from a baby shop) that clips on to the back off the back seat. It reflects into the rear view, so I can see babs from there and babs can see me.

Have you tried distraction with a car seat mobile ?

We have toys on Charlotte's car seat handle so she can look at herself, grab at them, etc. I have never sat back there with her though so she's used to being alone. She generally just goes straight to sleep and only wakes up/screams when we stop. Good luck!
