So I know I have read with my first that formula is bad to introduce but why exactly? I have a goal to not give anything but breast milk til 5 months when I plan on slowly introducing solids. I remember someone saying formula changed the gut or something just wondering what that was and why it's better to give nothing but breastmilk for a while. I supplemented with my first for a week as he was 10 pounds when born and my milk took 5 days to come in/.

It's called the virgin gut theory. As I understand it, it's based on the idea that for the first 6 months or so, the baby's gut wall is relatively 'open' and allows larger molecules through into the bloodstream than later in life. Some people believe that makes the babies more prone to allergies. There's some information about it here.
