I had a few bananas that had gotten a little too ripe so decided to use them up in a cake, the following recipe takes around 15 mins to prepare including; weighing, mixing, putting in oven and washing up!
4oz butter or margarine
6oz sugar (granulated, caster, or whatever you have available)
8oz self raising flour
2 eggs
2 large or 3 medium, very ripe bananas
2 table spoons honey (optional)
1/2 teaspoon cinnamon (also optional)
Heat the oven to gas mark 4; 180C
Grease a 2lb loaf tin/bundt tin.
Mash the bananas with a fork.
Cream the butter and sugar together and mix in the eggs
Mix in the mashed bananas then fold in flour
Spoon into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for another 30 minutes.
Leave to cool on a wire rack before turning out.
I also love to add chunks of chocolate to the mixture, coconut and nutmeg are also delicious additions!
