Gorgeous Banana Cake Recipe - Very Easy

I had a few bananas that had gotten a little too ripe so decided to use them up in a cake, the following recipe takes around 15 mins to prepare including; weighing, mixing, putting in oven and washing up!

4oz butter or margarine
6oz sugar (granulated, caster, or whatever you have available)
8oz self raising flour
2 eggs
2 large or 3 medium, very ripe bananas
2 table spoons honey (optional)
1/2 teaspoon cinnamon (also optional)

Heat the oven to gas mark 4; 180C
Grease a 2lb loaf tin/bundt tin.
Mash the bananas with a fork.
Cream the butter and sugar together and mix in the eggs
Mix in the mashed bananas then fold in flour
Spoon into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for another 30 minutes.

Leave to cool on a wire rack before turning out.

I also love to add chunks of chocolate to the mixture, coconut and nutmeg are also delicious additions!

ooo thankyou, i have some bananas that need using, i was going to make my usualy banana loaf tomorrow but will try this one as a change hehe
 
made this yesterday and added the honey, cinnamon and some coconut

sent some to work with future hubby and he just reported back that everyone loved it hehe

When i have bananas that are too ripe i always use them for banana cake its yummy isnt it :)
 
I would use it but I don't understand your measurements. :blush: I would have to google them and I am too lazy atm. :haha: Sounds yummy though.

Just made this cake to use up some over ripe bananas I had left, it is still warm, but tasted it and it is absolutely yummy!
