I done them to early last year and the heat of the house made them melt all over my floor
the smell and the mess was unreal so I have learned my lesson this year
I always scoop out the middle first. That way I can push the pieces through to the middle when carving IYKWIM. I use those stencils that come in a book for mine. I just tape the stencil to the pumpkin and than they sell those poker things to poke holes along the line so you know where to cut. After poking it all I take the paper off and start cutting! It's really quite easy but my hand usually ends up sore by the end of it.

Here's ours pretty simple & basic, but we did make a pumpkin pie out of some of the flesh from it!
