Things I've been eating for breakfast/brunch:
- Yogurt Parfait (low-fat plain/vanilla yogurt with fruit (fresh or frozen) and muesli) *just watch not to eat too much muesli as that can be sugary
- Fresh fruit of all kinds (especially bananas, oranges, and apples) with a few blocks of cheese (I cannot eat too much nor only fruit as my sugar spikes then crashes so the cheese helps take longer to digest)
- Hard-boiled/Deviled eggs
- Scrambled egg wrap with a side of fruit, yogurt, or veggies (I use multigrain tortilla wraps)
- Omelet (I use about 1/2 of the yolks) just with cheese and marinated veggies (I marinate onions, peppers, tomatoes, asparagus,etc. in some oil olive, balsamic vinegar, herbs and spices, fry it all up in a pan and put in my omelet)
- Smoothies of all kinds (with or without yogurt, sometimes I use almond or coconut milk, other times I use regular skim milk, low-fat frozen yogurt is great too) One mix I like is: banana, peanut butter, spinach, almond milk, yogurt, and ice. *I know the spinach sounds gross but you don't taste it, provides extra nutrients, fills you up plenty, and has a lovely green color
- Cereal/oatmeal
- Grilled cheese (not the healthiest but you can make just a half with one slice of bread with a side of fruit/yogurt/veggies)
*I personally don't usually eat breakfast much but have been with the pregnancy because I suffer from hypoglycemia and don't want it to be an issue. It doesn't mean I eat a big breakfast/brunch every day. For example, I had a yogurt at 8:25am and then had 2 tuna wraps at 11:30am. I'll probably snack on some fruit with a few nuts or so later and then have dinner and a glass of milk before bed. For me, spreading out my snackings has really helped more than eating less often as I would eat more at once. I haven't really been putting on any weight, just about a pound (I'm overweight to begin with so I really do not want to make things worse). Dinner is always a little more complicated for me but so far things seem to be working. I hope you find some ideas and feel more comfortable with things.
