You don't always need kits, tbh I find these a bit costly when compared to buying the materials you need individually. I very rarely shop at hobbycraft, I find the internet far more competitive.
You can find loads of free sewing and knitting patterns online with lots of clear instructions.
A small quilt is a nice easy starter, if you're going for a basic patchwork squares type quilt, you don't even need a pattern really, and you can buy pre cut squares on ebay and etsy.com, they are sometimes called jelly rolls or charm packs. You just stitch the squares together, choose a backing material, buy some quilt batting/wadding and then snadwich it all together and bind the edges, you will find realy clear instructions online.
Knitting a blanket is also easy, you just knit a load of squares then stitch them together, if you know anyone who knits, they can help you get started, nice wool is expensive though.
Embroidery is also a really cheap and cheerful hobbie and super easy, I enjoy it because you can do really small projects that don't take hours to complete.
