A guide to different nozzles

Thought I'd share a thread with different icing nozzles and what effects you can achieve with them. I'll get started and then as we all try different nozzles or find a different way of using a nozzle we can add with pics to help others. A bit like a library of nozzles and their uses.

I'll do a thread for each but will cover off Wilton 1M, 2D, 1B, 233 & 47 in the following posts. xx
 
This is a fab idea x I have lots of nozzles but havent got a clue what most of them do lol x
 
WILTON 1M

1M (style) is the first nozzle in every cupcake bakers collection. It's perfect for the classic cupcake swirl and beginners roses.

Here are some effects you can achieve with a 1M nozzle.

Classic swirls.

Classic swirls start at the outside of the cupcake and spiral inwards finishing with a peak.

Beginners Rose
Rose effect can be used as roses or just as an icing style. You start at the centre of the cupcake and spiral outwards. Add a sugar leaf for a rose OR a sugar decoration if not using as a rose. You put the decoration where the spiral finished to disguise the end of the icing tapering off.

Flat icing with a swirl
I use a 1M for this as it looks neater than any others. Basically baking cupcakes about 0.5cm below top of cupcake case. Then using a palette knife you add some butter icing in one colour and smooth it outwards to remove excess and leave a flat base. Once done you pipe a mini swirl on top in a contrasting colour. Start in the centre and work outwards like a rose but only doing one layer of swirl and not going to the edge of the cake. Finish with a decoration.

WILTON 2D

The 2D tip is the nozzle for perfect roses. It can also be used to pipe gorgeous ruffled and frilly swirls. It's dreamy.

Perfect roses
Once you've got used to piping and controlling the icing bag you'll want to push your creations to the next level. 2D is the perfect nozzle for doing to and allows you to create amazing roses. Starting in the centre again you do a tight inner swirl, making the nozzle cut through the icing as you pass it. Once you've done the inner swirl and withOUT stopping you lift the piping bag up slightly and apply more pressure for the outer swirl. This will give the appearance of a beautiful rosebud.

Frilly swirls
A frilly swirl is iced in the same manner as a 1M classic swirl. However you use the 2D nozzle, work slower and apply a lot more pressure. Start outwards and slowly spiral inwards and finish in a peak.

Wilton 233 is a grass/hair tip - which as the name implies is used to create grass/hair/fur effects.

It's a bit trial and error when you start to use it but basically you aim the nozzle directly at the cake about 2mm from it and apply pressure, continue pressure as you pull up and then stop pressure while continueing to pull away. You repeat over and over until the cake is covered.
**Make sure you have a bowl of ice handy as this requires a lot of pressure and you hold the bag a long time meanign the butter icing quickly warms and melts. Lay it on ice a new seconds in between each cake. Also use a heavy duty icing bag as the pressure can split cheaper ones**

The 1B nozzle is like a very large cross between the 1M and 2D. It can be used to create lovely big soft swirls. I haven't used mine much yet so will add to this as I go. Can be used for most icing styles mentioned however I suggets avoiding full cake covering swirls as it releases a LOT of icing and a full swirl might be too much for even the keenest cake lover.

I've just got my grass tip, can't wait to give it a go. I didn't know about the 2D either - will be adding one to my collection shortly...

Hey luv I know you didnt ask me ;) but to do the two tone (am guessing this is how everyone does it...) but I get a paintbrush out and paint the inside of the piping bag with the colour/colours I want then put the icing in and push the icing threw until you get the colour and start icing :D

Thanks Blob, this is kinda what I do however I mix up a little of a coloured icing in a bowl first. I then use a Palette knife to "paint" the inside of the bag with a thin layer of coloured icing rather than a paintbrush & painting with the colouring itself. Then putting the white icing in as you do - just works out easier for me that way but both ways have the same effect lol xxx
 
This is a brilliant thread!

I'm doing some cupcakes for my LO's 1st birthday, don't suppose you'd let me know your icing recipe? If I do the regular icing on the icing sugar packet it just never seems to come out like any of these...

What am I doing wrong? :wacko:
 
louppey try buttercream icing. Its just butter/marg and icing sugar always use double the amount of icing sugar to butter. Thats what i use and its a lot thicker than glace icing.
 
Thanks Boony. I was thinking about making cream cheese icing? But i'm so unsure. I don't know why i'm doubting myself so much, I just want everything to be perfect - not that Coralie would know if it wasn't :haha:
