How is it different to the aplix/velcro/hook and loop on the V3s? Is it stronger/more difficult for a child to undo?

I would say it's about the same.
The toughest aplix i've come across is the weehuggers mittens!

though admittedly we prefer poppers overall!

Yeah, I prefer poppers, but I do like the fit of BGs with aplix, and they are definitely easier for OH to do up. What exactly is the difference between V3 and V4, then? Does it last longer without going curly? My V3s are a year old and some are starting to curl, they're still ok to use but a little annoying.

My favourite aplix is Tots Bots Stretch. The stuff on Tots Bots Bamboozles is awful, I had to retire some (otherwise ok) preloved TBBs because of the awful aplix.
