Baby mum-mums are our version of rusks I think - they are similar but have very little sugar and salt. Like dissolving rice crackers sweetened with banana. But just started liking them so I buy them on and off - not too much though, since they contain almost nothing lol

The sweet potato pancakes are so so good! I make a double batch on the weekend and OH and I eat them for breakfast and I freeze the rest into little pancakes that Bun eats for snacks all week. You'll have to convert the amounts though - I only have american measurements...

1 cup whole milk (I use brown rice milk)
1/2 cup sweet potato puree (or pumpkin or yam or squash - all are delicious!)
1 egg
2 tbsp veg oil
1 tbsp white vinegar
1 cup whole wheat flour (I use whole spelt)
2 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt (I use a pinch)
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp grated nutmeg

Whisk together milk, sweet potato, egg, oil, and vinegar until mixed. In a separate bowl combine flour, sugar, baking powder, baking soda, salt, cinnamon, allspice and nutmeg until blended. Stir flour mixture into wet and mix just until blended. Let batter sit for 5 minutes before cooking - it will make them fluffier.

So so delicious!

Brilliant, thanks Sun!
We discovered that Ruby likes little pancakes, but the ones in the shops we have here are full of salt, sugar and rubbish, so I was looking for a recipe :)

yesterday Isobel had a
cup of cows milk, cheerios and half a banana for breakfast
fishfingers, peas and pasta with green pesto and a rice pudding for lunch with a cup of cows milk
crumpet with cheese spread and a peach for tea with a cup of water

B - toast & jam
S - fromage frais
L - fresh cod, garden peas & mash
D - will be tuna mayo brown pasta and corn on the cob
grapes & pear & yogurt to finish.

the pancakes sound yummy...when you have frozen them how do you recook them?

If I am going out, I just let them thaw in my bag or I take a few out ahead of time - Bun likes eating them cold. I have also just pulled them out of the freezer and microwaved them for 10sec until they are warm. The pancakes are really moist so they are still good.

Also you need to freeze in a single layer then package, or freeze between wax/parchment paper or they stick together!
