No idea. I don't like the idea of UHT milk, so would never buy it. I can barely stand pasteurized milk. Nothing like killing off the natural enzymes in a product that are beneficial to digestion.
I would guess that cooking with it would do much the same protein breakdown as the UHT and pasteurization processes do to it, so it would be fine.
