I have tried so many different ways to make fairy cakes. They always were too eggy or heavy or wouldnt rise... Then i spoke to a cake maker who gave me a tip and i wanted to share it as it WORKS!!
When you are making cakes,
Take 3 Eggs (in their shells) and measure them. What ever the quantity/weight (example 400g) you use the same for self rising flower, Sugar and Butter. Then need two table spoons of vanilla essence and 1 table spoon of bicarbonate of soda or baking powder
First mix your butter and sugar together till it makes a paste and then add in the vanilla essence and add your eggs and beat till it becomes a creamy mixture (its best to use an electric whisk as the more air, the bigger they grow) then sift in your flour a bit at a time and again whisk. Then lastly add your bicarbonate of soda/baking powder and whisk for a further minute. If it looks light and fluffy its ready (i sometimes have to add milk in to give it that extra kick)
Then cook on 190 degrees for 15/20 minutes and thats it.... yummie cakes!!
