One of my absoulte favorites! My personal recipe
serves 4
2 tbs olive oil
6 red peppers
2 garlic cloves (more if your a garlic freak like me!!)
2 small red onions (again preference, if you like white, substitute! I prefer red!)
2 pints hot vegetable stock (I use the Knorr jelly ones as they are lush!)
chilli flakes, pinch (however hot you like it really !)
salt and coarse black pepper
fresh torn basil to serve
Rub peppers with 1 tbs of the oil and roast for 30 minutes at 200c.
Remove stalks and seeds then place in a plastic bag for 20 minutes to cool.
Peel of skins and roughly chop/tear and set aside, saving any juices.
Finely chop the onion and garlic and fry in the remaining oil until soft. Add salt, pepper and chilli flakes. Stir in the peppers then add the stock.
Simmer for 15/20 minutes, then whizz with the blender. Season to taste with salt and pepper, garnish with basil and serve.
LUSH!!
Great for diets as its low cal and freezes great so you can make LOTS !! x
