Sarah, that video is pretty good. I would make only a couple of comments -- 1) at one point you see mom put the food in baby's mouth -- don't do that. It is tempting, but it will increase the chances they choke and 2) make sure to eat something with them, even if just a snack. BLW is about more than just learning to eat, it is also about learning manners and about meal time. Otter learned very quickly that meals are for chatting, too, and often chats to us while we eat.
I would start out with big fruit and veg like in the video as it is easiest for them. Move on to meat next. Meat is a little harder as they can't bite pieces off so have to figure out how to just suck on it. Bread is good to add shortly after fruit and veg, too. Otter struggled with bread in the early days as it is sticky so he gagged on it frequently. But it is a favorite now. Just becareful not to give too much as it has high salt content.
As for cooking the chicken -- you can cook it anyway you would eat it.
Also, in the video, that baby is offered lots of stuff with the peel on (like melons) you can do that, but you can offer it without peel, too. Try both ways and see which way baby likes it better. Banana is fine to offer whole. It is one of Otter's favorites. At first they might have a hard time with it as it is slippery and hard to hold. That is why you can leave part of the peel on (like in the video).
As for yogurt -- yeah, that is a tough one!
Otter has made QUITE a mess with that. Eventually they learn to dip their fingers and suck it off. You can also offer a preloaded spoon... just load the spoon and hand it to them. That is messy at first, too!
For pastas and stuff, just offer it how you would eat it. They will use their hands to pick it up and shove fistfuls in their mouth. But that takes time to learn so don't expect them to figure it out fast. Otter is only now getting the hang of that stuff and we have been BLW for 3 months. Your guy may pick it up faster because he is older and already has some skills developed.

Early days with watermelon (video). In this one you can see him gag (not choke!) at the beginning. It is important to know the difference. Don't intervene if they are just gagging. That is normal and part of learning how to move food around in their mouth. Otter has even gagged so bad once that he vomited after. That is common, too, and nothing to worry about (even if it is scary to watch the first time!!)
