what meals do you make? looking for new ideas.

I'm going to plan our food shop and see if we can get it a bit cheaper and looking for some new meal ideas too. We do our shop every fortnight so need meal ideas for 2 weeks.

What do your normally have for dinner and tea? x
 
Things that i cook from fresh are: roast, stew, spag bol, lasagne
then we cook stuff like enchiladas using the kits you get with wedges or chips
when i went shopping last they had them cook in the bag thingy's so i got one of them so thatll make a dinner with chicken and rice and veg.
 
I sometimes make Elbows. It's elbow macaroni, chop meat, onions, peppers and tomato sauce. :)
 
Homemade curry, homemade pizza (dough is pretty easy but u can buy ready made, also u can freeze it if u make a big batch!)
Pasta bakes, rice veg n meat, chips sausages n beans, jacket potatoes just to name a few!

We usually have a base supply of mince, chicken, sausages, pasta, rice and potatoes. Then some fresh veg but frozen is always handy too!
 
My meals for this week are

Pizza
Chicken fajitas
Corned beef hash
Lasagne and chips
Roast chicken dinner
Pulled pork baguettes
Pasta bake

Lunches we have either sandwiches, crumpets, scrambled eggs, jacket potatoes, super noodles sometimes, soup and bread. Today I had croissants with jam :haha:

We like fajitas, burritos, tacos, enchiladas, chilli and wedges,
We do pizza night or hotdog night
Soup and part baked rolls and chips for a cheap meal or egg chips and beans/peas
We like lasagne, spaghetti and meatballs, spagbol, pasta bakes or sausage pasta too

And corned beef hash, potato hash, chicken stew all with dumplings

Roast dinners and use the left over meat for sandwiches for lunches or in a stir fry?

I made a steak and potato pie last week, also like fry ups for dinner sometimes too.

Mexican casserole
Chicken and broccoli casserole
Chicken with one of the oven bags (bbq, herbs, and have heaps of other kinds)
On quick nights we have pizza,fish n chips, fry up.

I go onto youtube and find different recipes also.
 
Tonight we had chicken stir fry in a coconut and lemongrass type sauce
Last night it was sirloin steak with baby pots, griddled asparagus, baked tomato, fried onions and peppercorn sauce
Monday we had steamed salmon with a packet of Swartz soy and ginger sauce poured over it on a bed of rice

I have no idea what is for tomorrow or after

Chicken, leek and potato soup (also use carrot)
Gnocchi bake using homemade tomato and veg pasta sauce with mozzarella on top
Korma/tikka masala, rice, naan bread and poppadoms

Chips, fish, mushy peas and tartare sauce
Bbq pork medallions, cheesy veg and vegetables

Taco Pie

Ingredient List
• 1 (8 ounce) package refrigerated crescent rolls
• 1 pound ground beef
• 1 (1 ounce) package taco seasoning mix
• 1 (16 ounce) container sour cream
• 8 ounces shredded Mexican-style cheese blend

Directions
• Preheat oven to 350°F (175°C).
• Place crescent dough singles in a muffin pan and bake according to package directions.
• Brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well.
• When dough is finished, take out from the oven and place meat on top, followed by a layer of sour cream and cheese, and then top off with the crushed nacho chips.
• Place back into oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

Homemade Spaghetti Meat Sauce

Ingredient List
• 12 ounces spaghetti
• 1 pound lean ground beef
• 1 teaspoon salt
• 3/4 teaspoon white sugar
• 1 teaspoon dried oregano
• 1/4 teaspoon ground black pepper
• 1/8 teaspoon garlic powder
• 2 tablespoons dried minced onion
• 2 1/2 cups chopped tomatoes
• 1 1/3 (6 ounce) cans tomato paste
• 1 (4.5 ounce) can sliced mushrooms

Directions
• Cook beef over medium heat. Drain off fat.
• In a large pot, combine beef, salt, sugar, oregano, pepper, garlic powder, onion flakes, diced tomatoes, tomato paste, and mushrooms.
• Simmer at a low heat setting for 2 hours, make sure to stir occasionally.
• Cook pasta according to package directions. (I prefer angel hair.) Drain.
• Serve sauce over spaghetti.

Baked Lemon Butter Salmon

Ingredient List
• 1 lemon
• 4 salmon fillets/1lb of salmon
• Butter or margarine
• Salt & pepper

Directions
• Preheat oven to 400°F.
• Cut salmon filet width wise into about 1-1½ inch pieces.
• Spread a thin layer of butter/margarine over each salmon steak.
• Cut lemon into pieces and place 1 slice on each steak.
• Squeeze juice out of the remaining lemon over each steak.
• Bake for 15-20 minutes.

Mashed Potato Chicken Bowl

Ingredient List
• 1 can of corn.
• 1 packet of country gravy.
• 1 bag of popcorn chicken.
• 2 pounds baking potatoes.
• 2 tablespoons butter
• 1 bag of shredded cheese.
• 1 cup milk.
• Salt & pepper.

Directions
• Wash, peel, and cut potatoes.
• Boil a large pot of water. Add potatoes and cook until tender but still firm, appx 10-15 minutes.
• Mash potatoes using a potato masher or electric beater, slowly blend milk and butter into potatoes until desired texture.
• Salt and pepper to taste.
• Prepare gravy, corn, and popcorn chicken as per instructions.
• In a small bowl, add mashed potatoes, corn, chicken, and gravy. Cheese is part of the original but I’m lactose intolerant.

One of those chicken in a oven bag with boiled potato and veg
Fish and chips

Loads of salads, veggies soups (mixed veggies, potato & leek, lentil soup, brocoli & potato soup), veggie & meat stews with rice, baked veggies, beans (I buy dry), oven baked fish, roast/baked/ boiled chicken, freekeh (grain), bulgur wheat with stews

pasta I cook once or twice month :haha:

I dont buy mayo, ready made sauces, processed meat, or frozen ready meals

I make pizza from scratch but only if we have people over for dinner
 
We have hidden veg pasta a lot (because I know Lucas will eat it!)
  • Red onion, chopped
  • Mixed peppers, chopped
  • Cherry or baby plum tomatoes
  • Garlic, crushed
  • Fresh chilli, chopped (& de-seeded if you don't like heat)
  • EV olive oil
  • Honey
  • Pine nuts
  • A little bit of veg/chicken stock
Spread veggies on a tin tray, sprinkle half the pine nuts over, drizzle some olive oil and honey, pop it in the oven for about 15 minutes then whizz up with a blender, add the stock and mix it all with cooked pasta. Serve with the remaining pine nuts (sometimes I put it in a glass dish, add the pine nuts and some cheese on top and chuck it back in the oven for a few minutes).

I also like sesame beef noodles.
  • Lean beef mince
  • Shittake mushrooms, sliced
  • Sesame seeds
  • Schichimi spice (if you can find it, if not just use crushed chillis)
  • Oyster Sauce
  • Dashi stock (or nam pla and a little sugar)
  • Soy sauce
  • Ginger, chopped small
  • Garlic, crushed
  • Spring onions, sliced
Fry the garlic, mince and mushrooms together, add sesame oil, stock, oyster sauce, chilli, ginger, and sesame seeds. Mix and add more ingredients to taste (I just mess with the sauce until it tastes good). Serve with udon or ribbon noodles, sprinkle sesame seeds and spring onions on top.

I made a lovely pasta bake last night too.
  • Tomato puree
  • Basil leaves, chopped
  • Mascarpone cheese
  • Veggie stock pot
  • Mushrooms, sliced small
  • Yellow pepper, chopped
  • Cherry tomatoes
  • Red onion, chopped
  • Garlic, crushed
  • Chicken, chopped up small
  • Ham, chopped
  • Crispy potato slices (got them in Asda, like little slices of potato dipped in batter, chilled not frozen)
  • Grated cheese
Spread the pepper, tomatoes, onion and garlic on a tin tray and bake in the oven for about 10 minutes. Fry chicken and mushrooms in a pan, add tomato puree and basil leaves, mix in mascarpone cheese and take off the heat. Whizz the veggies in a blender and add to the sauce. Add the stock pot with water and mix together. Add the sauce to cooked pasta and stick it in a glass oven dish, layer the crispy potatoes on top, sprinkle with a little grated cheese and bake for 20 minutes on high. I served it with rocket leaves and cherry tomatoes.


Ooh, I have the leftovers of last night's in the fridge at home and I'm properly craving it now :lol:

Wholewheat penne pasta with tomato sauce and bockwurst (or frankfurters, they're the same thing) with basil and oregano in the sauce, plus a ball of mozzarella chopped up. Yummu yummy.

Frikadellen with peas, sweetcorn, carrots and mash. Frikadellen is really easy to make and is really tasty. Inexpensive too.
 
Frikadellen are soooo nice! I've only ever bought them mind, never tried making them.

Jacket potatoes with cheese/beans/tuna (whatever you want :) ) and salad
Egg and chips (chips are home made wedges, skins on, sliced up with oil and seasoning)
Spaghetti bolognese, always bulked out with veg and a tin of beans, makes it cheaper and healthier. It makes a lot so next day I tend to make lasagne out of the left over sauce.
Spanish omelette (sliced potato, onions, garlic, sautee them off then add beaten egg and cook gently, finish off under the grill with grated cheese on top)
Cook in the bag chicken - I buy cheap frozen chicken portions, I use the packet cook in the bag stuff sometimes but it's cheaper to buy the bags in bulk and make up your own seasoning, the meat falls off hte bone in its own juices :) we have it with rice or potatoes and veggies

That's all I can think of right now :p
