I made some black bean brownies tonight, but the recipe I have been meaning to try for a while now. I have a "Food" file on my desktop. These are not vegan, but are gluten-free. And so fudgy, yet light. I used turbinado sugar, no coffee, and coconut oil in place of canola. I think it could do with less sugar, they are a bit too sweet for me. I made these yesterday, using al the same ingredients as echo, OMG, such delicious brownies, unfortunately started eating them before taking apic, but they looked the same so you get the idea definately a must for everyone to try Quick question for you echo, did you use dry black beans and do the soaking cooking process, or did you get ready black beans? I bought dry and it took so long, will try with ready ones next time Did everyone stop baking or just forget about this tasty thread?
I used the canned. I do have dried beans, jars and jars of them...but I'm too lazy to do the soaking. My SIL made them, too and was eating brownies for breakfast. They really are so good. I made some corn muffins. I'll upload a pic later.
Sage Corn Muffins 1 cup cornmeal 1 cup flour 1 tsp baking powder 1/4 tsp salt 1 tsp sugar 2 tbsp dried sage 3 tbsp oil (I used olive oil) 1 cup milk (I used soy) 1 tsp vinegar preheat oven to 350F. Mix dry ingredients in a bowl. Mix vinegar and milk and let sit a minute (makes buttermilk). Add oil. Add wet ingredients to dry and mix well. Grease a muffin tin. Recipe said it make 12, but I only got 9 muffins out of it. I filled tins about 2/3. Bake 15-20 minutes, or until knife comes out clean. Great dinner roll option, as it is not a sweet muffin (or breakfast cake, as I call them). The sage is perfect company to the corn. Delicious. Recipe is adapted from the Veganomicon.
I was just looking for a yummy recipe to go with my kale soup for dinner tonight. I think I found a winner in sage corn muffins. Sounds delicious! Thanks for posting!
Hi ladies, i'm back on the baking train, I lost my sweet tooth for a few months there and any want for baking, but it seems it's returned. I made some delicious apple flapjacks this weekend Ingredients: 150g Banana 50g soft juicy apricots 25g light brown sugar 100g porridge oats 3tbsp rapeseed oil That's the official ingredients. However, I used: 2 large apples 25g light brown sugar 120g porridge oats (mine was a mix of oats and quinoa) 1tbsp coconut oil A nice sprinkling of coconut flakes 1.Preheat the oven to 180c 2.Peel and core the apples and put in the blender to make a fine mash 3.Put apple, sugar coconut flakes and oil in a bowl together and mix, then add the porridge oats and stir well 4.Put into the baking tray and cook for 15-20 mins until golden brown and then leave to cool. I plan to try some with different varieties of fruit, I think apple and blueberries is my next plan for these Here is a pic of my delicious brownies, and one of these flapjacks

Yesterday was my Birthday and I made a carrot cake for myself It was my first ever attempt at a carrot cake, but it was so delicious, so spongy and moist, I will definately be making it again in the future. I know most make their carrot cake with the creme fraiche type topping, but DH is a dairy free guy so this is a non dairy recipe Recipe
Happy birthday!! Carrot cake looks delish! That is one of my faves. I haven't been baking lately. The last sweet dish I made was sticky rice with mango and coconut, made on the stovetop.
I've never made carrot cake, but it looks delicious! I haven't done much baking lately... maybe soon..
So I am in the mood to bake, and it just so happens to be a coworkers birthday, so I am making a chocolate cake with peanut butter frosting. The frosting is so good, I want to eat the whole bowl.
