Anyway, I'm quite disappointed how my cake turned out. next time I'm gonna clear a whole day to do the decorating. I'm exhausted having been up since 6 :( Also looks nothing like how I wanted it to lol Ah well it is only my 1st cake, practise makes perfect!

the wedding cake is 3 tier......its all white tho will hearts on all tiers so really straight forward. but no matter how easy it sounds i just know its guna b hard finding the time!! my son is back at nursery the week i have to start making the sponges...so that means getting them both up, ready n dressed in time for ursery...coming back n trying to look after a newborn aswell as baking sponges...and before i know it, ill be picking Kai up from nursery!!! NOT ONLY THAT!! but i have to pack for my holiday!! i set off 2 days after the cake is finished so i have to find time to pack!! :rofl: i have totally over booked myself lol

How long would you say a sponge cake covered in icing keeps as long as it hasn't been cut? I am trying to make a timeplan for the week I am doing 2! I think I will cancel all the little cupcakes I was going to be making that week too!!! :D
 
for an uncut spongecake i would say u can keep it 3 days and then cut it n eat it within 2?? funnily enough i dont make cakes for myself....so ive totally forgotten how long they last.....i know its not long though...ur best off cutting n eating within 2 days for the best flavour, but it can be kept longer if the CUT cake is tightly wrapped.

if i had made that cake for somebody it would have cost over £100!! :shock: its a good job it was only for my bro!! hes mad on horror films like me :)
 
I was just looking through some of your prices and can't believe how little you charge! Your cakes are so much better than some of the shops online I look at for ideas!

My sister made that cake last week as a 3 tier and only charged for ingredients and it cost her £60 and they wanted £550 for 2 tiers!!!!
 
lol i know....my family go mental at me saying i slave away for hardly anything!!

trouble is...everyone else charges by the hour...which in my case would mean my cakes would become £500 too!! so i just charge a flat rate of £15 for time n electric (electric oven!! eeek) and then just charge for what i use. and can u believe some people still ummm and ahhh over my prices!!! i mean jeez.....if u want be that tight just go get a £5 one from asda full of E numbers!!! :rofl:

i know myself that i dont charge enough...but if i upped the price....no-one would buy around here...they are all druggies anyway lol

maisie fantasie is dear but i love the designs she does!! some people go way over the top for prices....im amazed they actually sell them!!
 
I added more stuff to it this morning and ended up much happier with it :D my mum loved it and it tasted lovely :D

How have I never seen this section before??

I only started baking a month or so back ans have had some real disasters like cookies that looked more like biscuits andmuffins that looked like fairy cakes.
My favourite and tastiest cake so far was a chocolate sponge which is below. It was so soft andmoist and scrummy....

Just last week I made a vanilla sponge but found it a bit dry so any soft, moist light sponge recipes you have and are willing to share send my way. Sponge below.

Oooo that chocolate cake looks delish!

Well here is my 4th cake, my 1st attempt at a stack..... bottom is vanilla sponge with vanilla buttercream and raspberry jam and top is chocolate sponge with vanilla and choccy fudge filling!
We are cutting it after tea so will let you all know if it is yummy! :munch:

Yep Sara all by hand, they didnt take long cos they aren't very detailed and I rushed them a bit :blush: Must stop rushing the end bit!!

So here it is cut, the vanilla was good but the chocolate one was amazing!!!!

I use the same one I use for my basic sponge and replace some of the flour for cocoa....

6 Eggs (weigh them with the shells and then equal measures of.....
SR flour sieved 3 times
caster sugar sieved 3 times
stork margarine

I replace 3 heaped dessertspoons of flour for the same measure of cocoa powder

Cream together the sugar and marg til it increases in volume and is really fluffy looking then gradually add the eggs with a spoonful of flour each time.
then mix in the rest of the flour.
Seperate the mix into two 8" tins

Then I bake at 180degrees for about 40 mins (I have a fan assisted oven)

what about the filling is it just bog standard choc icing???

when i ice cakes what do i use girls?? is there a specific type i need to use??? and do you need to cover the cake in jam or something?? to make the icing stick?? sorry i'm a total novice!!!
oh and another one the icing for decoration i.e flowers stripes etc do i just use the same stuff as you use to ice it????????

The filling was a ready made tub! I didnt see the point in going through the whole process of making it!

I use fondant, any make, I usually buy mine from tesco cos they do big packs and you can make the decorations with fondant too (i have so far) But there is another type that is for modelling and flowers which is much better, I will use that for cakes that I am making for people and not trials as it can be quite expensive!

For just a sponge cake, cover it in buttercream icing and smooth it out then let it set in the fridge a bit til it hardens slightly, then you can spray it witha tiny bit of water to make it sticky again so the icing will stick to it.

There is loads of different ways to do it but this is the one I use, I am still working on perfectly smooth icing!
