Thanks :) was totally worried as we do deal with EHO for the farm obviously but there it is so nice and simple for this (phew) she was just so calm and I talked her ear off for an hour :haha:
 
Can anyone recommend me a muffin tray as I seem to have misplaced the one we used to have? :blush:

I know I've seen somewhere I think it was KittyVentura posted all the nozzle sizes and what they pipe but cant find it anywhere..

Also am thinking of buying some of the moulds from ebay, but how do you use them and colour them?

Argos do a nice one Piperette, its by prestige. I love mine. I also have one from Sainsburys.

I get all my moulds from Ebay. When you get them wash them and use cake release to grease it and the push your icing into it and stick it in the freezer for like 10-15 minutes.
 
Helloo everyone!

Been experimenting with cake today (oh dear :haha: shame!) and have made a pretty good carrot cake (considering I'd never had it before and had to buy one to know what it tastes like lmao) with cream cheese frosting and hand made carrots, and a quite nice coffee and walnut cake :D

I say cake, I made them into cupcakes lol even though my friend wants big cakes, but I didn't want to waste big cake boxes to send her the samples so I've made cuppies adn they head out tomorrow for testing!

Also going to have a shopping spree on ebay for moulds... I'm spoilt for choice!

it's been an AGE since I've been in here! But I wanted to show you all a couple of wedding cakes I have done for friends!

This one was done for arcanegirl and her hubby, sadly the cake didn't make it to the venue in one piece :(
But I got there the next day and did my best to try and make it look ok again!!!

and this one is my friend Laura's wedding cake..... I really love this one! Had about 10 minutes to assemble it at the venue and I was shaking like a leaf cos there was so many people around me!
I'm used to doing everything with just me and Daisy around!

Ladies, when dirty icing a big cake do you have a different buttercream or do you use the same one? I tried to ice a cake at the weekend but I didnt know if I should have had my buttercream a bit softer if that makes sense lol
 
HELP!

So I sent samples of the cakes out and she doesn't want them very sweet! So I did a batch of coffee and the carrot last night, the carrot was gorgeous but came away from the cases :dohh: overnight and the coffee was bitter.

Tried again this morning and all the cakes were bitter!!!!!

How do you make cake less sweet???
 
The cupcakes are only samples but the real one will be a cake is that right? There is less icing per slice of cake than on a cupcake so that will be less sweet.

Also for the icing you could try cream cheese frosting reather than buttercream... need to practice with it as the consistency is slighly different and it melts quicker with the heat of your hands so you need to work quickly when piping.

Also what are you using to flavour your coffee cake? If using just instant coffee it can go bitter if you use too much, use boiling water (should be slightly off the boil) or just use cheap nasty instant coffee. Are there walnuts in the cake mix of just for decoration? They can also go bitter when cooked in direct heat, but should be ok if inside the cake.

I haven't experimented too much with carrot cake recipe but you can get away with reducing the sugar in a sponge cake mix (inc coffee cake) by a small amount, 15% or so tops. Any more than this will affect the structure/ texture of the cake.
 
She wants them as cupcakes now because she liked the cupcakes I sent her.

I think I used too much coffee... :/ what other ways can I flavour it

I made some cream cheese frosting and I think it's ok, but I don't like it lol :dohh:
 
With carrot cake I never use buttercream I always use cream cheese frosting. It makes it less sweet.
As for bitterness you need to add either sugar or a caramel to your coffee. I buy caramel coffee from Whittards of Chelsea, we still have one open here. Its lovely, its coffee but hasnt got that horrible bitterness to it.

As for coming away from the cases could your mixture be too wet? It could be the carrot, when carrots cook they release more water too so you need a really thick mixture and what cases are you using, I find the cheaper ones are no good for me.
