Ohhh Lou, thats brill! Looks yummy inside...!
Ive just finished making my chocolate sponge and raspberry and choc cupcakes...
The sponge was brill, went pretty well, ant said it was light and fluffy
but the cupcakes...well UHMM didn't go exactly as planned
Why did they spill over the top and stay quite flat, ladies? I tried doing a few with less mixture but they didnt rise enough, and then my new icing bag split so had to do the rest with a spoon! None of the nozzles were big enough really to get a nice swirl.
The icing was meant to be light pink, but just a touch too much of the red food dye...and then they didnt stay together very well once taken out of the paper cups..
Lily enjoyed decorating them though

actually, do I need a deeper muffin pan...i used a bun pan..?
