What are some of your favourite recipes you make during the week?

We're looking to add some variety to our weekly menu. What do you make the most and how do your toddlers like it?

Daniel LOVES pasta and sauce.
I just use an onion and garlic fried up together. Add minced meat (beef, turkey, and pork work well - if using lamb, I chuck in a handful of dried mint leaves)
add a tin of chopped tomatoes, a squirt of tomato purée and an oxo cube (depending on what meat you use)
I also add sweetcorn, peas, carrots and finely chopped spinach and let it simmer til the veg is cooked.
Mix it with some pasta and serve!
(although, I was getting fed up with Daniel always picking the veg out, so I tend to puree his sauce up a bit and then mix it with the pasta and he eats the LOT!!)
 
We're all about things that can be made in advance/quickly so we eat a lot of spaghetti bolognaise, chilli, frittata, soup, jacket potatoes, pasta with cheese sauce/tomato sauce, homemade pizzas. Weekends when we have longer we make other things like curry, sausages and roasted sweet potatoes with veg, stuffed chicken wrapped in bacon with veg, roast dinner. Evie doesn't care much for chicken but will eat sausages and mince happily and chicken if its a bit hidden like in a soup etc. We probably have loads of other stuff too but that's off the top of my head.
 
We don't make this all the time but roughly once a week/ once very two weeks:
Vegetable curry- fry onion, add two tablespoons of tikka masala paste, half a can of reduced fat coconut milk and bring to boil, add 200ml of one vegetable stock cube, add however much u like of any veggies like butternut squash, green beans, peppers etc cover and summer until tender, u could add whatever meat u like and serve with rice :0) my lo loves this!!

Pasta with a tomato and hidden veg sauce (cook various veg with a tin of tomatoes and blend) can be cooked in batches and frozen or chilled.

Turkey mince meatballs and patties, serve with the above or as patties with some veggies finger food meal

Pack of Sausages, an onion or leek, carrot, butternut squash, swede, potato, parsnip, green and red split lentils, tinned toms, beef stock cube all cooked in the slow cooker or oven for a few hours, scrummy and makes a massive batch for freezing

Chicken thighs, onions, garlic, tinned mixed beans, whatever veg you have, chicken stock cube, tin of toms nice with mash and veg

Beans and multi veg mash (white and sweet potato, swede, carrot etc) this is my LO fave!

I like to have a big stash of freezer stuff so I know I've always got a quick meal to hand for LO so once a week or, so I do a big cook off and then freeze everything in these https://www.ebay.co.uk/itm/NEW-50-x-R...80330043686& My LO would never eat baby food and now won't touch any kind of convenience foods (fish fingers etc) not through lack of trying so this is what I do to make sure I don't spend hours cooking each day but knows she's eating well.

I would definitely recommend investing in a slow cooker if you don't already have one, I've found it invaluable cooking for a family while juggling working, childcare etc :thumbup:
