any kind :flower: i'm specifically after some sort of chunky pea and ham soup!
 
Spicy Red Lentil Soup Ingredients:
This isnt pea and ham but it my fav! Spicy lentil and red pepper soup. You can serve it like a broth or blend it so it's nice an creamy, good either way!


1 medium sized onion
3 medium carrots and potatoes
1 red pepper (I use the sweet pointed chili pepper)
125g red lentils (soak for 1 hour prior to cooking)
1 teaspoon of paprika
1 teaspoon of turmeric
A pinch of cinnamon
A pinch of cayenne pepper
A 400g can of tomatoes
750ml of water or vegetable stock (knorr stock pots r my fav)
1 teaspoon of basil
1 bay leaf
Salt and pepper

1. Chop the vegetables finely.

2. Heat 1 teaspoon of oil and fry spices.
3. Add vegetables and lentils and stir and coat vegetables with spices. Cook for about 5 minutes.

4. Cut up tomatoes, put them in a measuring jug and add enough water or stock to make 1.2 litres.

5. Add this with basil and bay leaf to pan of vegetables. Bring to the boil and simmer for 40 minutes or until the lentils are cooked.

6. Add salt and pepper to taste. Add more water or stock if you need to

I've made this a few times and it's a hit, otherwise known as pea whack here.:thumbup:

I don't use exact measurements though :dohh: but here is what I did.

PEA WHACK

Ingredients

200g Yellow split peas
200g Red lentils
(soak both of the above in water overnight)

Half a gammon joint (think they are around £4.00..you could use the full one though if you like your meat, or you could use a ham shank but I find gammon easier as it has no bone)
6 good size carrots, scraped and chopped
6 medium potatoes, peeled and chopped
2 large leeks, chopped

*Start by filling the biggest pan you've got with water and boil up the gammon until it's nice and soft and almost falling apart
*Take out the gammon and add all the veg and lentils and split peas to the pan (leave the water in), bring to the boil and then simmer until everything is nice and soft.
*Shred, tear, chop (doesn't have to be pretty:haha:) the gammon and throw in, voila pea whack!

I prefer unsmoked gammon for this recipe and with a smoked one I find it too salty but if you like you salt then it's up to you :thumbup:

Also I usually blend it all up just before adding the gammon pieces as my OH hates lumps but the rest of my family prefer it unblended.

LEEK, BACON AND POTATO SOUP

Ingredients

25g butter
4 rashers chopped streaky bacon
4 large leeks, chopped
4 medium potatoes
2 veg stock cubes made up to 1 litre
Half a pot elmlea single cream
Streaky chopped bacon to serve

*Melt butter in a large saucepan and fry until golden
*Tip in leeks and potatoes, stir well, cover and turn down the heat. Cook gently for about 5-10 minutes shaking every now and then so doesn't stick.
*Pour in stock and bring to the boil, cover and simmer until soft
*Leave to cool and then blend
*Return to pan and pour in cream, stirring well
*Garnish with crispy chopped streaky bacon and serve with crusty bread

EASY PEASY TOMATO SOUP

Ingredients

2 tbsp olive oil
1 chopped onion
2 tbsp tomato puree
2 tins of chopped tomatoes (around 800g)
pinch bicarbonate of soda (half a teaspoon)
600ml milk

* Heat oil in a large pan and tip in onion, cook over a moderate heat for about 5 minutes.
* Stir in tomato puree, then pour in the tomatoes and bring to the boil
* Turn down heat and leave to simmer for around 15 minutes
* Spoon bicarb into a bowl and mix with 1tbsp milk until no lumps, then tip this into the tomato mix and then pour in the milk
* Bring to the boil (it will froth but it's ok) and simmer for 5 minutes .
 
MMM Ham Soup, so glad I looked on here as have been looking for a good recipie for this.

Will most definately give it a try....also any suggestions for minestrone soup?

Wanted to thank you for sharing the bacon leek and potato soup. Did it today and it was delicious :)
 
Ingredients

3 rashers streaky bacon , chopped
oil
1 small onion , finely chopped
1 large potato , peeled and cut into small cubes
350ml chicken or vegetable stock
400ml milk
200g sweetcorn , frozen or tinned, drained if tinned
2 tbsp snipped chives

METHOD:
Fry the bacon in a little oil in a pan - as soon as it starts to colour, add the onion and potato and cook until the onion starts to soften. Add the stock and milk and bring to a simmer. Cook for 5 minutes or until the potato is tender, then add the sweetcorn and heat through. Season and stir in the chives.

Per serving

379 kcalories, protein 17.6g, carbohydrate 46.4g, fat 14.9 g, saturated fat 5.1g, fibre 3.3g, salt 2.55 g
