sprouting potatoes

I was going to make my famous beef and potato layer casserol in the crockpot today for dinner, but i noticed that my potatoes are sprouting! :(

now, i heard several things about eating green potatoes and sprouts could be poisonous because they are in the nightshade family. so im wondering, if i cut the sprouts off and peel them really well, will they be ok to eat? i dont want to cause unnecessary harm to my baby.
 
I've never heard anything about not eating sprouted potatoes. We grow our own, store them in the basement during the winter, and eat them for months on end. They sprout. I cut the sprouts off and eat them. No big deal.

oh yay! ok...heres the lowdown on the layered beef and potato crockpot casserole.

peel and slice thinly about 4-5 potatoes, depending on how big your crock pot is.
slice up 1 onion thinly
cook off 1-2lbs of ground beef, season to taste. and drain fat
one can of creme of...condensed soup
and enough milk to fill can
salt and pepper

spray crock pot with PAM. Layer potatoes at the bottom, season with salt and pepper. add a little bit of ground beef, about a cup. and place some sliced onion on top of beef. layer potatoes over the ground beef and onions season, and repeat making sure the last layer is potato on top. once you used all your sliced veggies, and ground beef, mix one can of creme of chicken (or you can use any other creme of...condensed soup) and one can of milk and pour over the layered potatoes. set to high for 4 hours.

you can add other things like cheese, corn, other veggies or what have you.
its super easy, and super yummy. i was craving it soooo bad today so im bummed my potatoes are trash. =(
 
i had heard the green potato thing but not the sprouting bit. me and most people just rub the sprouts off i think x
 
I just cut the sprouts off, although if they feel a bit squidgy I throw them away x

even squidgy potatoes work if they are cooked though :) especially if you mash them ;)
 
I know that with green potatoes it doesn't matter if you peel them right down so you can't see the green any more, the toxin will still be there.

I can never seem to find any that aren't slightly green any more, its annoying.
 
hey i cut the sprouts of and if there hard and not green ill peel them and eat them but if they ar squidgy and or green ill chuck them xxxx
 
I'd heard that sprouting spuds are bad for you too, I would usually chuck them unless I can't be bothered going out for more, then I just cut them off. I find that buying unwashed spuds helps them keep for longer and take them out of the plastic bag and put in a paper bag or one of those canvas type reusable bags from charity shops or supermarkets, it keeps them dark and lets them breathe. I wouldn't worry too much, you'd prob have to eat an awful lot to do any harm.
