And mmmm just the thought of cilantro pesto sounds amazing! I never knew they made a pesto from it. When I moved to Utah years ago and tried some of the hispanic food I thought "yuk" to cilantro as I had never eaten it before....2 years later I was addicted to the stuff

I miss mexican food!
Speaking of which...there was this elderly woman who showed me how to make a stew with slow cooked pork (steak it, cook, then she did something else to it) with HOT spice and it is super thick and amazing. I only saw half the process as it took 2 days for her to cook. Anybody know what I'm talking about? Not sure if it was Mexican or Native American dish but it was killer (killer is good

Dd's are out getting a new snowman put together...I have to run some stuff out to mail to my attorney...do some school....not a whole lot on my sleep deprived schedule for today
I know, I felt the same way about cilantro, but it grows on you. This bowl was absolutely fantastic, well other than the price, I think it was $5.99 for the bowl. That is pretty pricey for an individual frozen meal! I wanted to get a few items to have on hand for when I don't have time to make a GF meal. I am going to make a list of things to make over the weekend, and freeze them in small portions, so I have cheaper but still GF food ready to go. (I don't have little munchkins that see food and eat it)!! Well I do, but Zoe hasn't figured out how to work the microwave

AFM - I'm gearing up for a busy weekend. The plan is for me to get all my cleaning, laundry and shopping done tomorrow (and some cooking). Then Sunday my Mom is coming over and we're going to do more cooking, visit the market near my house, they have the most amazing fresh vegetables, and all sorts of things I've never seen before, like horny cucumbers, and well just odd produce, and it is all really cheap and way fresher than the grocery store. We are also going to get some gardening done. I need to get some mulch laid, some bushes trimmed and the dead palm fronds that the gardeners throw behind my palms. Yes, the ones that I pay to clean my yard, they think I don't notice that they throw them behind the palms. Well I do! So I make a big pile of them and then they have no choice but to cart them all off

I plan on making a Mediterranean salad, and some sort of lentil/veggie soup, that will be my lunch for the week. Then I have to think of a few other things I can make and freeze for dinners, like a stir fry with rice, or GF pasta and meatballs, etc. I also have a GF bread mix I'm going to try. We'll see how that turns out.

I'm looking forward to being more organized, and having yummy and nutritious food to eat!
Oh, and I keep forgetting to say, but Zoe is doing really well. She is amazing that at 10 she is in great health. The way she runs after Zach and they play all day long, it is just great. Then I get home at the end of the day, and its cuddle time, then dinner, then walkies, and more cuddles. She likes to sleep on top of the couch, where the cushion is the most cushiony! Zach is often on top of me sneaking kisses, or beside Zoe on the top of the couch. They are nutty doggies! Both very happy and healthy, they both got a clean bill of health from the vet today too. She was very impressed with Zach (since she hadn't met him before) and asked how he came to be, and was shocked when I told her he was almost bald when I first got him, and how underweight and neglected he was. All the while he is jumping in her lap and giving her kisses, and Zoe never to be outdone jumps up on the scale and gets in on the action. It was Dachshund loving at its best!
