Thai Chicken thighs in slow cooker
8 x chicken thigh's (skin off)
1 cup chicken stock
1 cup peanut butter
1/2 cup soya sauce
4 tbsp chopped coriander
4 tbsp lime juice
3/4 tsp cayenne pepper
4 tsp grated ginger root
chopped cashews to sprinkle over when serving
Place chicken thighs in slow cooker. In a bowl combine stock, peanut butter, soya sauce, coriander, lime juice, cayenne pepper and ginger. Mix well and pour sauce over chicken. Cover and cook on low for 6 to 8 hours, until juices run clear when chicken is pierced with a fork.
