haven't tried the fishfingers - i am worried about bones, too, so i made the tuna croquettes instead.
don't have a recipe as such for the goujons, but it is something like this (amounts are a bit of a guesstimate as i didn't measure them):
preheat oven to gas mark 6.
mix together about 50g dried breadcrumbs, finely grated zest of 1 lemon (unwaxed, of course), and some herbs (i used about a tablespoon each of dried rosemary and thyme), and some freshly ground black papper.
cut 2 large chicken breasts into strips, coat them in flour, dip in beaten egg (1 egg was enough), and then coat with the breadcrumb mixture.
bake the goujons for about 30 mins (i'm pretty sure they were done before then, but i am very paranoid about chicken and tend to over-cook it!)
this made plenty for all 3 of us (i actually made double the above amount and froze half - i'm on a mission to fill my freezer with proper food as i use up the frozen breast milk, so i won't be tempted to fill it with the processed rubbish we used to eat)
