Cake Making & Baking Group

would you freezer it, really? The sponge is in a cake tin atm and am planning on finishing it off tomorrow afternoon, so if I put it in the freezer, what do i put it in and how long do i leave it defrost before i buttercream/ice it?
 
Professionals do that Jac :) They make sponges in batches and freeze them.. it makes crumb coating and BCing easier. No idea how long itd take to thaw though as ive never done it myself!
 
Well I finally finished a cake. Luckily I was in time for Amelia's 1st birthday party. So here it is. My 1st attempt at a tiered cake and my 3rd fondant one. Excuse the mistakes I'm still a complete novice!

LOL the party was fantabulous!!! She had a great time running everyone ragged and being centre of attention. She has a cold so I was expecting her to be whingey but no she did us proud! We're all a bit exhausted now though as 1st guests arrived at 1.50 and the last left at 20.30!

They do taste bloody lovely though if I do say so myself!

Now a Question how the heck did I end up all sticky and hands covered in the icing? The bag wasn't too full but was a pig to fill and it seemed determined to come out of the top, please tell me I am not the only one to get in a mess the first time :lol:
 
I still make a mess now and mine comes over the top! Not sure what i'm doing wrong.

Jac, if you leave it in the freezer overnight it'll need a good few hours to defrost, but unless you want to eat it right away its not a big deal. It does make the crumb xcoating SO much easier, but i dont know if you guys are doing that when your making them, i havent seen you mention it :lol:

Thanks ladies! I really enjoyed making it and I'm hoping to have an excuse to make another one. I kept it a bit of a secret that I was making one as I have a good friend who is amazing at cakes and I knew she's offer to make one, but I wanted to try it myself. She's more into cupcake than fondant ones so has asked me to help her out on her 3 next orders. Not sure exactly what "help" I'll be, pmsl!

Pinkgirl I could just stuff myself silly with those marsbar cupcakes, they look so scrummy!!!!

I thought a crumb coat was just like the technical name for the buttercream or w.e you put underneath the fondant to help level it out etc...or am i just being dim yet again?

andrea...no didnt do a brick effect..thought that would look better on a boys castle cake but i dont see why you cant do it on a girls xx

and as for freezing cakes...im not a fan of it myself...it just never gets to the right texture again?! i know the local cake shop freezes them, but i cant say id do it myself....plus i havent got enough room in my freezer amongst the potato smilies :rofl:

hi hun, a crumb coat is a layer of buttercream you add to the cake (thinner consistency) and it catches all the loose crumbs off the cake n sticks them in place....then when that is set u add an extra layer of thicker buttercream for an even base (so no crumbs lumps n bumps are present, as they are stuck to the layer underneath.)
i dont crumb coat mine though, just extra work n extra time to leave to set etc. i just add a generous layer of buttercream to fill in the 'cracks' LOL then add fondant xx
