Hey girls

This is my first post in here, hope Im allowed in lol!

Ok so Im wanting to try and make my sons 1st birthday cake thats coming up in March, with a zoo theme. I am buying fisherprice zoo animals and want to arrange them on a two tiered cake and decorated to look like a zoo with lake, ice area, etc etc with choc fingers as fencing round the outside of the cake. Ive seen a couple similar on google but tbh im quite bad at the baking.

Ive read some of the posts on here so will try out some of the hints and tips given but I have a couple questions ...

1/ What size eggs do most of u use?
2/ If they are sponge cakes one on top of another, how/do i need to secure them somehow?
3/ To make 'grass' or 'soil' can i use food coloring on dessicated coconut?

Gwhizz...i use medium eggs at room temperature,
as for tiering......cover ur bottom cake, insert a dowel into the centre (or drinking straws are ok for a 2 tier) mark where the icing is an pull back out....cut JUST below the mark and cut 3-4 more all the same size. insert one back into the centre, and the others around it.
put ur top tier onto a cake card of the same size as the cake,and cover it. blob some royal icing ontop of where all the dowels poke up and place your top tier on them!!

yup...coconut can be coloured for grass!!

Wow, that looks great!!!

I am making some chocolate truffels right now, they smell gorgeous, but I still have to wait some time before I can actually finish them. Hope they turn out okay!!

Wow CaitlinsMummy that's a beautiful cake! And you asked all the questions I was about to ask too so thanks!!!

I've come to beg for another chocolate cake recipe. I made then one I was given previously and it was great just tasted a little treacly for me (everyone else loved it though) Any idea's? Must taste lush! Maybe chocolate fudge even? Thansk again, sorry for being a pain! x
 
It was this one that Blah very kindly gave me

Ingredients
2 1/2 cups plain flour
1 1/4 cups (285 g) granulated sugar
3/4 cup (170 g) dark brown sugar
1 cup (110 g) cocoa powder
2 1/4 tsp baking soda
1 1/2 tsp salt
2 1/4 cups (18 fl oz or 540 ml) buttermilk
1 cup (230 g) unsalted butter, room temperature
2 large eggs
1 1/2 tsp pure vanilla extract
6 oz (168 g) melted semisweet fine quality chocolate (plain choc)
 
woah no wonder it was rich! Sounds yummy though!

If I am doing a chocolate cake I keep it as simple as possible especially if it is going to be covered in fondant too! I do my basic sponge recipe then add cocoa :)

this recipe is for 2, 8" sandwich tins

6 eggs, weigh them in thier shells
then the weight of the eggs weigh out equal measures of

S/R flour (sieved 3 times) For chocolate cake I take out 3 heaped dessertspoons of flour and replace them with Cocoa Powder)
Soft Marg
Caster Sugar

Whisk together the marg and sugar til the mixture has increased in quantity and is pale and fluffy, the add an egg at a time continuously whisking, add a little flour with each egg, once all the eggs have been added add the rest of the flour and whisk till the mixture is smooth and creamy looking.
Add, 1 or 2 teaspoons of vanilla extract and whisk in.

I bake at 170 degrees for about 40 mins, but I have a fan assisted oven so you might need to adjust it

Once cool I sandwich them together with a layer of vanilla buttercream and a layer of chocolate fudge icing (i buy this one ready made!)

I'm currently looking to replace my hand mixer. Can anyone recommend a good one? I'd love one of those lovely bowl mixers but really can't justify the expense!
 
I just made some cupcakes :happydance: Only problem was the icing was a little too runny :( But at least I know for next time! I'm looking to start doing this a hobby now, just need people to want them haha! Also how much do you all charge? xx
