Here you go Wendino!! I actually didn't get to eat any, so I can't attest to the taste, but they all disappeared quickly so I'm assuming they passed!
3/4 c rolled oats
1/2 c uncooked Red River Cereal (I didn't know what this was, but I used a 7-grain cereal that I make so I think it's kinda the same thing!)
1 c buttermilk (I just made sour milk instead - add 1 T vinegar and sit for 5-7 mins, until chunky!)
1 c flour
3/4 c brown sugar
1 t baking powder
3/4 t baking soda
1/2 t salt
1/3 c melted margarine (I used oil instead cause I was feeling slightly lazy!)
1 egg
1 c fresh or frozen cranberries (I used frozen ones that I had from Christmas, yikes!)
Combine oats, cereal and buttermilk. Let stand 40 minutes. Combine flour, sugar, baking powder, baking soda and salt. Add egg and margarine to cereal mixture, Add dry ingredients. Mix well. Stir in cranberries. Makes 12 big muffins.
375 F for 25 minutes.
If you're not a cranberry fan I'm sure any old berry would do!

I sucked out of work this morning because I was sick last night - thank goodness I kept an icecream pail beside the bed...ewwwwww!!
So now I'm baking some cookies now - we turned our furnace off and I'm too cheap to turn it back on, but it's only 15 degrees in here and I'm FREEZING!
