I like to do a victoria sponge as they always seem more moist, using 6oz butter/caster, 5oz SR Flour, 3 med eggs, 2oz Cocoa powder and 1tsp baking powder. Best hand mixed.
Sift flour & baking powder into a bowl, mix in your beaten eggs and add butter & caster. Sift in cocoa powder last. Spread your mixture evenly in the cake tin
We have a fan oven so I have it on about 150 degrees for about 25 mins or so - dont open your oven too early though as you may get what I call 'a pond cake' and your mixture sinks in the middle!
