Tracie your cupcakes look fab! Mmmmm!

I need to go to ASDA and stock up on EVERYTHING! I have baked my cupboards bare!

Planning on making All Butter Shortbread and Scottish Tablet next, as requested from the guys at OH's work! Thats where all my baking seems to end up!

Oh no...my mouth is actually watering at the thought of Tablet! My Mum's Aunt used to make it for us but since she passed away, I've not had any of the proper stuff - only 'fake' shop bought imitations! Don't suppose you have foolproof recipe for this?! (Or is it a secret one that's been in your family for years?!)

Mmmmm....tablet.....mmmmmm!

P.S. For anyone who hasn't had tablet, just imagine the richest, toffee/fudge type flavour, that just melts in your mouth and dissolves to nothing... it crumbles away leaving nothing but a smile on your face! :)


LOL This is a recipe that has been in our family for years and years but it's not a secret!

900g Sugar
100g Butter (proper butter, cant be unsalted)
1 cup of milk
A Tin of Condensed Milk

Grease a standard swiss roll tin with butter or line it with greaseproof paper

Gently melt the sugar, milk and butter in a large solid bottomed pot, once the sugar is completly disolved add the condensed milk....
Turn up the heat til it is at boiling point, leave it at that heat for a minute or so, keep stirring though!

Then turn it down to a very low heat and keep stirring, usually takes about 40-50 minutes, you can't leave it or stop stirring or it will burn and taste minging!

To test it put a small amount on a plate and see if it sets or you can add a small amount to a cup of cold water and leave it for a minute then lift it out with a teaspoon and gently tap it against the side of the cup and if it sounds hard, it's ready (quite hard to explain that test!)
My Granny used to just lift some out of her pot and let it pour and she knew it was ready, she would never tell us how she did that and still to this day we dont know! She took it to the grave with her!

Once ready remove it from the heat and lift your pot into an empty sink and careful not to burn yourself beat the mixture 60 times with your wooden spoon.

Then poor the mixture into your greased tin and leave it to sit for about 20 minutes for the top layer to set and then you can score it with a knife so it will break easliy.

Then leave to set, then enjoy!

aww thanks....i used to make them all the time....im having a well earned break whilst im pregnant!!! standing up for two days solid decorating just aint guna happen now!! lol

Right we are having a trip out this morning and stocking up on baking goodies. OH wants to watch the foot ball later so i will be baking! so excited, think i am going to make some muffins/brownies- better uses the books i have as havent yet! will update later!
 
Oh now you have put me in the mood for brownies! Going to the cinema this afternoon then shopping so will stock up on stuff and bake tonight when Daisy is in bed!

mmmm i LOVE brownies....id never be able to make them though!!! i used to like baking, but ive baked that many cakes now i get bored of the mixing part!!!

I am really looking at starting to practice decorating cakes, as I want to make my daughters 1st birthday cake. What supplies do you think I will need?
 
well i started out with NOTHING, and i mean nothing!!!
the cakes i do now require cake smoothers, n all sorts of tools ever made!
but u can get away with making a great cake with minimal tools.
youll need a cake pan (in the shape u want) a colling rack....a rolling pin n ur hands!!!!
flat ones are obviously the easiest....when u start carving them into 3d it can get abit of a nightmare!

Didnt get round to cooking yesterday, so doing it today instead. I have some cinnamon swirl muffins cooking in the oven right now!! hope they turn out ok. Going to make some chocolate ones next! yummy x
 
Nutty Mummy your cakes are awesome! I am planning on making daisy's 1st birthday cake too Wendino so need to start practising!

Nutty Mummy what type of piping bag do you have? Mine is past it and I would like to get a decent one this time!

i have seen that site TJG....they are all so brill!! and very proffesional!
i dont have a piping bag (used to have loads but all they did was split!!)
i just use greaseproof paper.....cut into a triangle, then folded over to make a bag. snip the end off and drop your piping tip in the end. great thing about it is, u can have a few colours ready all at once, and theres no washing up!!!

i dont really use piping that often....but needed to for this one....it took AGES!!!!

this one would make a brill first birthday cake.....especially in a pink dress with a party hat!! youll wow everyone!!! (its alot of cake though! lol)
