to make 20 truffles:

5tbsp double cream (a small pot should be enough)
1oz butter
11oz chocolate (i always break the chocolate up really small)

*line a tin with greaseproof paper (I use random shaped tins, it doesn't matter lol)
*measure out 8oz of chocolate.

*melt the butter and cream on low heat until boiling, stirring constantly.
*When it's boiling, let it boil for 1 minute (still stirring)
*When boiled, remove from heat and mix in 8oz of the chocolate until smooth (milk choc will go smoother than white)
*immediately turn into the tin and leave to cool
*put into fridge after 10 minutes and chill for at least 2 hours (I usually chill overnight)

After 2 hours

*break off pieces of truffles, and roll into 20 balls. Put balls onto greaseproof paper and re-chill for another hour.
* melt the remaining chocolate over boiling water.
* dip the balls in the chocolate, and lift out using 2 forks, let the chocolate drip off and put on more greaseproof paper, back in the fridge for 2 hours, or until set!!

there we go!
 
thank you hun will need to copy and paste this into my emails so i don't lose it great way of making them, might make some for familly and wrap them in nice cellowrap with pretty ribbon, may i ask how long they will keep?

Imake them, keep them in the fridge until I give them away, and they last about 2 or 3 months!

Past couple of evenings I've been Mrs Claus and knit this. Santa shall deliver it with the rest of the goodies on Christmas Eve! :shhh:
 
ah thanks thats great might make them about a week or so before i give them out for extra freshness.....


also going to be a pain does anyone have any good tags they have for like snowman soup, or truffles etc, i'm working in college now so i have basically unlimited prints so can print of nice labels if i can get them :D
 
my knitting skills consist of simple knit and perl lol
 
Mine aren't much more exciting than that tbh, but planet purl on you tube is a great teacher! lol
 
I can knit in a straight line with no pattern (I don't know all the different names :lol:), so a scarf is my limit :haha:

2 or 3 months!? Wow, you have willpower, they wouldn't last 2 or 3 minutes in my fridge :lol:
